ZöbingerHeiligenstein in Kamptal is a special place for growing great wines because of its unique ancient desert sandstone soil. The Bründlmayer family owns 12 hectares there, mostly planting with Riesling and trying out Cabernet, especially Cabernet Franc. They use a special Lyre trellis system for more sunlight and air. The rocky soil gives small, flavorful berries. In Riesling, the taste comes from slow pressing or leaving the skin on overnight. Fermentation and maturation happen in stainless steel, resulting in a clean, zesty Riesling with juniper and Braeburn apple notes. The wine is fresh, dry, and has red-berry aromas, a 'slim fit' structure, and ends with a bit of fruity sweetness. It pairs well with starters, seafood, grilled fish, fried chicken, white meats, and Pan Asian food. It's also a good choice instead of red wine with roast fat duck.
