Natural sweet wine of D.O. Jerez - Xérés-Sherry, of oxidative aging, its best qualities come from the grape variety used for its vinification. The grape from which the musts come to Pedro Ximénez Triana is the one Pedro Ximénez, subjected to different degrees of asoleo, and after a very careful elaboration we obtain musts of great wealth of sugar. Its fermentation, slow and controlled temperature, produces wines that retain all the aromas and characteristics of Pedro Ximénez grapes. With the traditional system of Criaderas and Solera, it is aged in oak barrels, carrying out oxidative aging over the years, which brings to Pedro Ximénez Triana the body and the aromas that characterize it.
