El Viejo is crafted from 100% Tinta de Toro grapes. This wine derives from vines over a hundred years old, meticulously chosen for their rarity and natural cultivation in soil rich with granite. Handpicked, these limited-yield grapes undergo a precise two-week maceration, followed by spontaneous fermentation in concrete tanks with native yeast. Aged for 16 months in new French oak barrels.
El Viejo has a deep cherry-red color and intense depth, hinting at violet notes along the edges. On the nose, it offers a rich complexity, combining ripe black fruits with creamy, sweet barrel nuances and a touch of spice. The palate delights with remarkable smoothness and fullness, showcasing the complexity of low-yield, superbly ripened grapes.
"Matsu" is a Japanese word that means "wait." It reflects the idea behind this project - waiting for things to happen naturally, like waiting for vineyards to reach a hundred years old or waiting for just the right moment to uncork a bottle of wine.
